I am no expert in this area but I believe there are two main products.

Dragon Naturally Speaking & IBM Via Voice

This site does both:

You can get Dragon standard for about 80 and Via Voice Standard for about 40

A site for free software is:-

Speech to text you might have to pay for as vehelpfulguy said.

...mmm...tried a few over the years but never reall got what suited me..............Watch the teletext subtitles "live" on tv and you will see just how good (NOT) this software is, and they will have the best you can be sure.............some were better than others but even the best could never manage.... "Supercalifragilisticexpialidocious" without stuttering.....good luck.....commoner <G>
We had the IBM one on the old pc (tohugh it was from 98 so its probably better now) it couldnt recognise my accent (geordie) and it took ages to go through this thing for it to learn your spesific voice, i dont think i ever got throught it and i just gave up and learned to type quicker.
