Picked up a bottle of Sancerre in France a few months ago. Saved it until now. Put it in the fridge for a few hours to chill.

Bit surprised on opening it - its red! LOL damn my minimal knowledge of wine. I've had Sancerre before and thought it was always white.

Its quite nice now a few hours later as its returned to room temperature.

You can actually drink it chilled, Booldawg, as it's light.....a Beaujolais goes for chilling down as well - the French "colonies" often drink these wines like this as well, particularly in the French West Indies.

I've heard you're supposed to 'let it breathe' with a red. Does just removing the cork and letting it stand for an hour acheive this?
Tip it up and down a few times and then let it breath. Tough love on wines!
Not really, think about how much wine is exposed to the fresh air. Pour into a decanter (failing that, a glass jug).

If not those two options, it's better to pour off half to a glass of wine and enjoy that, leaving a little more space in the bottle to breath.
For Funks Sake.......get it drunk or pass it here...cold, room temp or boiled ....I'm not fussed.

I agree mick if it's got alcohol in it you can drink it at any temperature, after all just which branch of the taste police decided that white wine should be drank chilled and red at room temperature. Drink it how you like it.

It should be savoured....millions of yeast cells have given their life to this bottle of wine!
I have a bottle of Dreamtime Ridge an Australian Red. No doubt filtered out of a billabong somewhere because there is no mention of a vineyard on the bottle. I'm not really a wine drinker, if I do I prefer a sparkling sweet white wine, not Australian. The last Australian white could have been filtered from Paul Hogan for all I know.
