If I make mashed potatoes one day and keep them in the fridge, will they be ok the next day or will they be a bit watery? Thanks.

I've kept them in the fridge about 4 days and still used them, they were fine.
should be ok. if covered sher.
When they come out the fridge, they will be a lot firmer - but on heating, will revert to original texture.

Cheers both - thinking ahead to the big day. Know the veg will be fine as I've done it before but mash is a current big favourite.
When making mashed pots I always boil until soft, drain and return to the hob to dry out completely. Then mash before adding butter, hot milk and a little parmesan.

If you try to mash the other ingredients into the potato, you will end up with something akin to plasticine. If you are making the mash as a topping, add two egg yolks.

Thanks Gingejbee - you weren't there just now.
I made some fishcakes and kept them covered in the fridge and they were Ok the next day to fry. How will you warm them back up?
I warm mine back up in the microwave, then add a bit more butter and milk if necessary.
No, they won't be watery, we do that all the time. A good thing to do with leftover mash is use it for making Shepherd's Pie, or, make fried mash to go with sausages and beans (one of our favorites!)
Even easier Aunt Bessie has frozen mashed potato.

I shall be zapping it to buggery in the microwave! Th reasons why I asked is because I have put home fish cakes in the fridge and they were watery the next day.
