Some chocolate is and some isn't.I'd try a higher end chocolate rather than a 'cooking' one like Green and Blacks. They have a nutrition page which will tell you which products are ok

I Googled the cocoa for you and is seems that Nestle is gluten free but I'd check other brands before using.

It just came to me that G and B also make organic cocoa powder which is also gluten free.
