Oven roasted beetroot

Bought fresh beetroot today, you know with the mud still on. Been told that it's delicious oven roasted. Does anyone know how to prepare, how long to cook? Better still has anyone tried it and is it tasty?

Cooked it a long time ago but can't remember how long it takes to cook. I think you just rinse and dry it and cook with the skin on. When it is cooked the skin peels off easily although it stains your hands. Not as tasty as in the jar I don't think. Worth a try though

I don't know how long you cook it for but like maggie said you just rinse and dry it, we wrapped each beetroot up individually in foil and then baked. I think they're yummy. Jamie Oliver has a recipe which sounds nice...http://www.jamieoliver.com/recipes/2004/05/13/baked_beet root_w.php
..if you peel and thinly slice up the beetroot , deepfry in oil (or dry slow roast in oven for healthier option) they make scrummj crisps...

I'll definately try the crisps in future, but for lunch tomorrow, i'll stick to the oven baking method.

can't tell you how to cook beetroot...but i can tell you that roast beetroot is scrummy!
