If someone is dismissed from their job for a breach of their terms of their employment contract, what is to stop that person on future job applications stating that the reason why they left their previous job was that "it contractually came to an end".

Nothing whatsoever. But they would have to be prepared for the possible follow up questions
As count says, nothing, they can say what they like. A reference request to the former employer though may ask the same question.
Well it didn't contractually come to an end, it was contractually terminated.
