Just been watching this on Channel 4. The poached salmon nicoise looks lush. I missed the bit when GR was poaching the salmon - can anyone tell me what he put in the poaching liquid, please?

I'm guessing mind but what else would he need but salt and perhaps a couple of bay leaves. After all you do want salmon to taste like salmon don't you?

Fennel, celery, onion, salt, white wine, tarragon vinegar, star anise, crushed white peppercorns, parsley, bay leafs and sliced lemon!!! (I couldn't get any fennel so a few fennel seeds will have to do)
