Chutney help required

I have tried to make damsen and apple chutney (first attempt ever!) but it has a vinigary after taste, can anyone give me tips to stop this happening again??

Reduce the amount of vinegar.
Some chutneys taste sh1te when you've just cooked them, I've just made some courgette chutney, & it recommends you leave it for at least 2mths before trying it.
most of the vinegar should be boiled off in the cooking
