I just had an interview for a job in a ski shop, I want to write a follow up letter but I only know the interviewers first name, should I just use that in the Dear......... or sir or what? May it seem rude?

Generally you shouldn't write a follow up letter, you should wait for them to respond which they will do if you have got the job.

If you have to write then use Dear Sir or Dear Madam, depending on the interviewer's sex.
Phone up their switchboard, tell them the first name of the individual who interviewed you and ask them if they can tell you his/her surname.
