What should I do about the orchid roots that are spilling out of the pot?
Plant seems very healthy.

Orchids like to be pot-bound (small pot) and also they tend to have "air roots" which are meant to be out of the soil. So overflowing roots are not a problem. If it is getting to be unsightly, move it into a slightly larger pot. Use orchid potting material, as orchids do not like regular potting soil.
