Hi...this is an American recipe that my mum used....and I do now.
For the brown sugar...use Molasses sugar (from Sainsbury's)...and for the Molasses, use black Treacle. This is a very dark and moist cake.
Maryland Gingerbread
2 Eggs
¾ cup Brown sugar
¾ cup Molasses
¾ cup Melted shortening
2¼ cup Flour
2½ teaspoon Baking powder
¾ teaspoon Baking soda
2 teaspoons Ginger
1½ teaspoon Cinnamon
½ teaspoon Cloves
½ teaspoon Nutmeg
1 cup Boiling water
Add beaten eggs to sugar, molasses and melted shortening; add flour sifted with other dry ingredients; add hot water last.Beat between each addition.
Bake in individual greased pans or in greased shallow pan in moderate oven at 350 F. about 40 minutes. Makes 16 pieces.
