i'm attempting to make my first chicken pie and i've seen people add wine as a sauce they cook it on the hob first...is that it? do u have to do anything else with it and how long do u heat it up for?
also i'm just having puff pasty on top - do i have to cook pastry first? i'm cooking chicken first...help!

I don't use any fat. In fact I don't make a roux any more. I just mix cornflour with a little milk and stir it in. There is enough fat (rapeseed or olive oil generally) in the fried onions and chicken without adding more fat. I certainly don't use any fat in cheese sauce, cheese is 100% fat anyway. Seem to get really good results without it. I don't use butter any more full stop for health reasons. I do love it though!!
