i'm attempting to make my first chicken pie and i've seen people add wine as a sauce they cook it on the hob first...is that it? do u have to do anything else with it and how long do u heat it up for?
also i'm just having puff pasty on top - do i have to cook pastry first? i'm cooking chicken first...help!

Fry some onion until soft but not brown, then add the chicken pieces and brown. You can add some bacon for a nice flavour or some mushrooms. Then add about half a glass full of white white and reduce it down by half. Stir in some cream, creme fraiche or just milk and season well. Thicken with a little cornflour if necessary. It needs to be fairly thick. This makes a fairly good chicken pie mix. You can add some peas in too or anything else you fancy.

PS . You put the uncooked pastry on the top and put the whole thing in the over to cook the pastry. Probably about 15mins to 20 mins.

I'll probably regret that almost as much as introducing the upside-down writing!
Dice the chicken up .Fry it off .Chuck it a bowl and add whatever you want ,mushrooms ,peas ,onion ,sliced peppers etc .Use your imagination .Make a white sauce .A roux of butter and flour then gradually add milk to thicken ,season,and then add that splash of white wine. The sauce should be not too thick and not too thin .Pour it over the chicken ,stir it all up ,bung it in a pie dish . Wet the edges of the pie dish .Roll out the pastry and put it on top,knock the edges up and make a slit in the top and and brush it with beaten egg . Bake in a hot oven until the pastry is golden brown .Tuck in :)
Lottie you've forgotten the type of dish, whereabouts in the oven and the temperature....
