I always thought that 'muffin' was always done behind closed doors.
magicmerlin you are thinking of Muffin the Mule..
Do you have a 'works' bookshop near you?
I bought a book in there for 99p called 'everday muffins and bakes' It's got 100 recipes for muffins, cupcakes, zuccherini and biscuits. You would never ask for another cake recipe on here again................it's fab!
double choc muffins, makes 12
200g plain flour
25g cocoa powder
1 tsp ground cinnamon
115g golden caster sugar
185g white chocolate, broken into pieces
2 large eggs
100ml sunflower oil
200ml milk

line a 12 cup muffin pan with cases
sift the flour, cocoa, baking powder and cinnamon into a large mixing bowl. stir in the sugar and 125g of the white chocolate.
place the eggs in a separate bowl and whisk until frothy, then gradually whisk in the milk. stir in the dry ingredients until just blended.
divide the mixture evenly between the the paper cases, filling each 3 quarters full.
Bake in a preheated oven 200c/400f for 20 minutes until well risen and springy to the touch, cool in the pan for 2 minutes then transfer to a wire rack.
place the remaining chocolate in a heatproof bowl over a saucepan of simering water and heat until melted. spread over the top of the muffins, allow to set, and dust the tops with a little cocoa powder.

thank you for the recipe Lexie, you didnt say how much baking powder, and when do i put in the oil. i will defenetly get that book thanks again.
sorry. It was 1 tbspn baking powder.
It doesn't say in the recipe about adding the oil. I suppose it is mixed in with the eggs and milk.

Choc chip muffins (not chocolate muffins but just as good)

2 eggs
250ml milk
125 ml vegetable oil
100g granulated sugar
100g brown sugar
1tsp vanilla extract
400g flour (plain)
4 teaspoons baking powder
1 teaspoon salt
150g chocolate (I use milk but plain is good to)

preheat oven to 200C (gas mark 6 400F)

Put flour, salt and baking powder in bowl and mix thoroughly

Put eggs, milk, oil, vanilla extract and sugar in another bowl and beat together

Chop the chocolate up into small pieces and stir into flour mixture

pour on the liquid mixture and mix together until just blended.

Line a muffin tray with paper cases and fill each case to just below the top with muffin mixture.

Bake for 20 - 25 mins

They are cooked when u insert a skewer and it comes out clean (apart from melted chocolate !!)

this makes about 12 muffins
