Does anyone have an idea as to what wine we could try with a layered terrine consisting of chicken, spinach and carrot

You can drink whatever you like with it RocW ...... I think the "science" of what to drink with which food is very over rated - I agree white is best with chicken but that's as far as it goes - drink whatever you like is my advice!
I agree with echokilo - anything you fancy. There really ARE no set "rules" - although if I drink anything alcoholic at all, I have red wine with chicken.
White meat...white wine...red meat...red wine

Kebabs...Lager
Kebabs - loads of calories! Lol.
Kebabs with salad...low cal diet
I agree with the "drink whatever you like" principle, but there are certainly cases where wine and food will clash horribly - soft cheese & red wine, highly spiced dishes with almost anything, and the reason there are general principles about white with fish or red with steak etc is because they generally tend to complement each other better.
