I was driving down a road, i'm not sure if it is a 40 or 30 mph road but i was doing about 35 mph. There was a police officer on the side of the road with one of those speed guns, he didn't stop me but if i was speeding, would have had to stop me at the time or can they send me a fine through the post?

They do not have to stop you. You will know within 14 days when your NIP (notice of intent to prosecute0 drops through the letter box! If it doesn't you are more than likely to be in the clear! If it arrives later than this then you have grounds to fight it!
It recently happened to me and Iwas not stopped either!
I forgot to add that no speed signage on a road will not clear you either! ( but if signage is very dirty, badly sighted or damaged so you cannot see it, you would have very good grounds to get off!
Really if you see no speed signage you should assume it is 30-mph. Sometimes you will know it should be 30 by urban development and closer lighting posts than norm, although there is some contention to this, it is best to err on the safer side!
