Hi, this is a very long shot.... My local chinese does the most yummy sweet n sour cantonese chicken, the chicken is coated in this floury stuff which cant be described as batter as such and the sauce is seperate .. i was wondering if there is anyone who knows what the coating is and how it is made.. i would like to try making it myself as it would be cheaper... Any ideas?? i would be really grateful if anyone could help.. ;0)

we do chicken that's been marinated in ginger, garlic, soy sauce salt, pepper and then coated in potato flour (Tesco) deep fried with a sweet & sour sauce - yummy!
You could also try mixing some cornflour with the marinade.....it seems to hold the moisture in so the chicken is quite succulent.....it also seems to stop the exterior of the meat from toughening up during cooking, while keeping the meat fully coated in the resulting sauce.
our take away call tht style "Hong Kong style"

Funny how it varies. Couldn't agree more, I LOVE it
