Can I make a will that ensures that if I die first charity A receives the residue of my estate after my spouse dies (we have no children)?

Who's going to have your estate before your spouse dies?

If you mean you want to give your spouse a life interest in your estate, with the charity to take full title after your spouse dies, then yes.

But of course your spouse can do whatsoever he or she likes with his or her own estate.
