a while back i saw some pink cheese with white bits in, does anybody know what kind of cheese it is?

I think I have seen something similar.  Could it be white stilton, ie the cheese itself without the mould injected in.  Instead they inject it with port, cranberry or other berry-type I believe which gives it an overall pinky-white effect.

Red windsor is a cheddar type cheese flavoured with port.  The link has a picture.  I once impressed an interviewer at dinner by knowing to ask for Red Windsor to the extent that he offered me the job on the spot.
