Is it really possible to crack open a safe with a stethoscope, or is this just the work of Hollywood?

Yes, it is possible to open a safe using a stethoscope, listening to the internal mechanics of the safe, as the dial(s) are rotated.

Safe manufacturers counter this by making the mechanisms as quiet as possible and/or adding false mechanical sounds.

However the stethoscope method will not work on a modern electronic safe, requiring input of a code on a keypad.
you don't need a stethoscope on the one i use at work , you just have to listen to it to hear when the numbers drop into place, its just the sequence you need to know, 4 to the right 3 to the left 2 to the right etc etc ....
anyone know where i can get a stethoscope from then?
