The best pears

When in Spain I had goats cheese salad with pear puree, I've tried to make this but the pears lack flavour and seem watery, any ideas please?

You might try cooking the pureed pear then cooling it to take off some of the water and intesify the flavour - worth a try! Hope this helps :)

Thanks Mia, have tried to get some cooking pears but can't find any but in the meantime will give your idea a try
I would suggest Williams pears. If you need a stronger pear flavour, why not try adding a little touch of liquer, like Poire William (you can buy little minature bottles from the off licence, ideal for cooking).

p.s. I never buy CONFERENCE pears, these are the ones that taste gritty.
