Hi,

Thinking about making a risotto in advance (to take to a friends with me) and wondered if risotto withstands this process?
Don't want to ruin the ingredients!

oh, it will have NO meat in it.....
Thanks!

It will be fine. I have reheated risotto before without a problem. Still tastes better served immediately.
Just to add, please put in fridge once it had cooled down to room temp and then re-heat thoroughly, should be careful re-heating anything especially rice dishes!
Cooked rice that has not been handled properly can harbour bacteria--bacillus cereus I think it is called-that can cause food poisoning. You MUST cool down the rice quickly and then store, and it must then be re-heated thoroughly. I used to re-heat rice but since doing several food safety courses I know it is not worth taking the chance.....particulary if serving to others.

Thanks all, think I may stick to a stroganoff instead - don't want to poison anyone!!
I have been re-heating rice for years and never suffered any ill-effects. Also, rice salad keeps in the fridge for days.
