I am trying to lose weight and I love chicken but it can get a little boring. Has anyone got any good tasty recipe ideas that are low fat. Thanks.

I wrote you a really long answer earlier but it won't let me do it, try weightwatchers.co.uk as they have some recipes for low point chicken curry and chicken satay yum! Also maybe try marinating some chicken then cooking on a big george with some over cooked potato wedges, cold chicken and salad, chicken stir fry with loads of veggies, there's lots!
oven cooked, not over cooked lol! Oh and also meant to say M&S do some good cook in count on us sauces.
You could mince it and use in place of minced beef

Butterfly it and stuff it with sun-dried tomatoes, asparagus, mozzarella, secure with cocktail stick and bake it

Place between two sheets of cling film and hammer it paper thin with a rolling pin then spread a mixture of finely diced cooked veg and herbs and rollup as a sausage (the chicken breast being the sausage skin) - bake or pan-fry, turning regularly to ensure even browning.

Turn the meat a couple of times while cooking. I make this and serve it over rice or over simple cornmeal mush, with sauteed kale or collard greens.
or marinate some chicken breasts in a spicy barbeque sauce, and grill them. Leftovers can be chopped up and added to salads or pasta dishes.

Chicken parmesan - marinara sauce poured over the chicken breast, topped with some mozzerella cheese, and bake. Or top the chicken with cheddar cheese and broccoli and bake.
Remember always to buy free range chicken.
Piri piri chicken (for 1 person) - roast a de-seeded and halved red pepper for half an hour in a hot oven. Peel it and whizz in a processor with a clove of garlic, 1 chopped and de-seeded red chilli, 1 measured teaspoon of oil, 1 tbsp white vinegar and a pinch of salt. Cover a chicken breast with it and either put in the oven or grill for about 20 mins. It's gorgeous!
