We're making burgers tonight - has anyone got any tried and tested recipes or should we stick to the "mince, onion and beaten egg" favourite?

Probably too late now but I always stick to Delia's recipe.

Just beef mince (with 20% fat to keep it moist) salt and pepper.

All other flavours can be added as sauces/dips.
a teaspoon of garam masala in the mix ....
A good squirt of tomato ketchup and a few splishes of worcester sauce always taste superb.

A sqirt of lime juice, some grainy mustard and some runny honey is nice too

Or you can roll your burgers into a ball with a small ball of cheese in the middle....flatten the whole lot out and fry.
some chopped chilli to spice them up works for me

Minced beef
Onion
Egg
Choppped chillies
Salt
Pepper
Garlic
Teaspoon ketchup
Teaspoon mustard
Spring onions
Basil

sorry i know it was a while since you asked about this but I do normally put some herbs in it, just really what kinds you like and also grated breadcrumbs. Sometimes sprinkle some grated cheese through, and even little bits of chopped bacon.
I've just made lamb burgers. Put 1/2 pkt of Sainsbury's lamb mince in processor with 1\2 onion roughly chopped and 2 teaspoons ready made mint sauce. Whizz up til pulverised then do other half pkt of mince. (Your processor may be big enough to hold the whole pkt.) Form into burgers. Cook and serve in buns with plain yogourt mixed with mint sauce to taste. Delicious. Plain and simple.
