Destination advice needed please - taking my Mum on holiday

I'd like to take my Mum on holiday but I need a bit of advice regarding destinations. I'm thinking Spain or one of the surrounding islands. Can anyone suggest anywhere that would be suitable? Ideally it should have nice beaches and have interesting sights and markets that we could visit during the day times and be suitable for more mature tourists... A friendly Irish pub for the evenings would go down a treat too! Suggestions gratefully received, thanks!

Have a look at Puerto Pollensa, Majorca. A very family friendly resort. No night clubs lots of great restaurants and bars and a fabulous beach.
Puerto Rico in Gran Canaria. Stay in the top part of town by the Europa Centre there's the Irish Cottage, family bars and restaurants and no nightclubs. Mogan market on a Friday is beautiful, local market in Arguinegan on a Tues or wed, a trip to the capital Las Palmas, the sand dunes at maspalomas. Loads to do and the hottest weather imaginable lol.
well the Riu Chiciana in Sancti petri is supposed to be perfect for a sophisticated quiet holiday, can't confirm that as Thomas Cook cancelled my stay there at the last minute cos they overbooked the rooms, grrrrrr (nope, i can't let it go!)
if i were going to take mum on holiday, i would take her on a last minute cruise, because there a lot going on, shows, games. dancing and if she does not want to take part she can sit and watch. or do anything she wants, they are brilliant and cheap and there s so much going on,
