Why does mineral water that has trickled through mountains for centuries have a "use-by" date?

Sales companies and this include companies who sell water make more money the more they sell, so they place sell by dates on things that don't necessalliy need them. You then throw them away and buy more.
I dont think the water you drink out of a bottle is centuries old, rather that the stream has existed and trickled through the mountains for centuries.
Either that or the inclination of these mountains is less severe than i thought.

On a side note i dont understand why people pay for the taste of plastic in their water. Water from glass bottles or taps actually taste like water dont they?
While the water was trickling through mountains it was constantly moving, when it is bottled it doesn't move, because of this water can stagnate, but I think it would probably take longer than the few months that the "use-by" date allows.
