Its lovely with a peppecorn sauce or melt some brie in a pan and add some fresh black pepper and some precooked mushroom and drizzle over the steak.

Both lovely with sauteed potatoes.

For 2 steaks...

1 coarsely chopped pepper,cracked
1 tablespoon butter
3 tablespoons brandy
1/2 cup whipping cream
2 teaspoons green peppercorns in brine, drained & coarsely chopped
1 teaspoon dijon mustard

Season steaks with salt and generous amount of cracked pepper. Melt butter in heavy large skillet over high heat. Add steaks and cook to desired degree the put on a plate.

Remove skillet from heat. Add brandy and ignite with a long match. Return skillet to heat and bring brandy to boil, scraping up any browned bits. Add cream and green peppercorns and boil until reduced to sauce consistency, about 2 minutes. Whisk in mustard. Season sauce with salt if necessary. Pour sauce over steaks and serve.
The most important consideration with steak is the quality of the meat that you start with. Try and buy some well hung sirloin steaks from a reliable butcher - avoid supermarket meat. Coat each side in a mix of olive oil and crushed garlic for a couple of hours. Preheat a corrugated griddle pan and put some sea salt and black pepper on both sides of the meat JUST before putting the meat on the griddle. Sear both sides of the steaks on a high heat, then turn the heat down until the steaks are cooked to your liking (a bit of trial and error here). Should melt in the mouth with a bottle of something red........
