Was given a butternut squash but have never cooked one in my life.  What can I make with it?  I do like most veggies but am at a loss how to cook this.

Oh maggie you are in for a treat

half it length ways, scoop out the seeds and discard them,  and roast with a little oil and salt and pepper and when soft scoop out the flesh mash with salt and enjoy.

Or as above and add to stock with seasonings of your choice and then blend for a silky creamy soup.

Peel and roast like potatoes

To start, you'll need a very sharp knife and strong hands/wrists. I can't handle the damn things anymore. 

Butternut goes well with strong warm spices like cumin and coriander, pepper and chilli...so chunky slices coated in spices and olive oil, then roasted is good.

Also great in a risotto with sage. Or mashed. Nice with sausages or any pork based dishes.

 

I just roast mine with olive oil and some salt and pepper.

To make it easy to peel, I cook mine at high pressure in my Instant Pot for a few mins and the skin just slides off.  Apparently, you can do the same with a microwave.  If you google the "singing swede" it is the same thing.  I find peeling them a real chore.

Makes a delicious soup!

I have been known to stick it in a bag and bash it with a wooden rolling pin!

Thanks for all your suggestion folks, going to try some out and will let you know how I get on. May be on my shopping list from now on if it works.

I forgot....curry!!  It's great for that. 😋

Must remember red's rolling pin trick next time I'm p****d off. 🙄😅

I also make soup with it.  My daughter passed on a nice recipe - butternut squash, red pepper and onion.

You can also fill it with nearly everything mince, chicken, sausage, veggies ,tofu etc and bake

They have excellent heft for launching at cats visiting the flower beds. Other than that I can't think of a use for them.

If I feel the need for a soil flavoured dish I'll just use soil.🤢

Well, I cooked my butternut squash as "singing swede" as barmaid suggested. Mashed half and had with sausages and gravy.  The other half I put into my soup.  Have bought another one and will attempt to be more adventurous - friend told me oven baked BS chips are yummy too.
