i've always enjoyed liver, and know that in certain respects it is good for you, but have only just found out it is high in colesterol, me being a chef as well, nevermind i'll still eat it but how bad is it for you

Its saturated fat thats the killer. My cholesterol was 13.5 not due to food but hereditary. Ilook for fat in food not cholesterol.
LIver is highly nutritious and an excellent source of iron, so it is especially good for women of a certain age.

It is also a good source of vitamin A, zinc, copper and manganese, and a very good source of protein, vitamin D, vitamin C, riboflavin, thiamine, niacin, vitamin B6, folate, vitamin B12, pantothenic acid, phosphorus and selenium.

I can find no evidence that it is high in cholestrol. However, because your body stores vitamin A it does not use, you should only have liver once a week or so. Over years, too much stored vitamin A can cause problems with bone fractures. As you enjoy liver, you will never need to take cod liver oil. Hurrah!

So enjoy your liver!
