What Do Do With 1/2 A Kilo Of Fresh Ginger

An internet shopping mistake means i have a piece of ginger that weighs over 1/2 a kilo - it's the size of a giant's hand!
I wanted 1 thumb sized piece of gnger for a stir fry, but what can i cook/make with the rest?

You mince it as I have done in the past and freeze it in ice cube trays.
Ready ginger for future use though a little laborious depending on your grater,
I'm told that you can freeze it. Not done it myself but try googling 'How to freeze fresh ginger'. Wither that or you'll be very, very busy putting it into syrup! :)
Unpeeled Ginger stored in an airtight bag will keep for 2 months apparently so at least you have som time to think about it
As an aside Jamie Oliver advocates we have no need to peel-it when grating but I try to.
Ginger wine ?
If you don't want to mince it just slice very thinly and then freeze as you would raspberries.
Now that is a better tip than mine Iady-janine. Will try that in future. A bit like the dried garlic flakes I have bought in the past.

I never peel it Retro, majority of the skin gets left behind on the sharp side of the grater.

Slice a non off that has a nodule on it, place in a small container with a lid and squirt with water place somewhere warm and watch it grow in about a month you can plant it in a pot.
The rest pop in a bag or box and leave in the fridge and use at will or peel and slice Kay flat and freeze then bag up so it doesn’t get stuck in a lump

Not a very interesting point but I also make all my own cordials and use them in all sorts of recipes.

A Ginger cordial floats my boat. I was in hospital for a month last year during a heat wave. Windows could be only opened about 3/4". I was instructed to drink loads of liquid and my dear wife bought me in a bottle of Belvoir Farm Ginger cordial. The Caribbean nurses eyes lit up so I gave them some. They must of had a run on it at the local sainsbury where my wife bought it as they loved it. I always have a bottle on the go to mix a little with my Pusser's rum. :-)
