There are plenty of travelodge & Premier inns but I cannot attest to the quality of service.
We stayed at the Hilton at fenchurch street and it was amazing not expensive at all and so near fenchurch and Tower Hill stations
this seems to have a £95 special (for 2 adults and a child) if you pay now

On the South Bank, next to Borough Market, 5 minutes from London Bridge tube/mainline; another 5 minutes to cross the bridge (Southwark bridge even closer) into the City and another 5 to St Paul's. Handy for the Shard and Globe (Vinopolis used to be over the road but it's gone).

The reviews seem pretty good, maybe less so recently; I haven't stayed there though
Any Premier Inn. They are at St. Pancras, Kings Cross, Euston. I have stayed at all of these, never had a problem. The first 2 are a walk from Coram Fields, adults must be accompanied by a child to enter the park. Stratford is also good with good tube service and Westfield shopping but not really central London
Premier Inn child breakfast was free
