But if all of the persons in those countries who died from covid were underweight/normal weight – then being overweight would seem to protect against death from covid. But we don’t know the obesity rates of those that died, so no conclusion can be drawn other than countries with low obesity rates tend to have lower covid death rates (not that obesity increases the risk of death).

I’m not saying that most people from these countries who die from covid are not obese, I’m saying if this is so, then the information does not support the hypothesis (that obese persons are at greater risk).
You need to know to draw the correct conclusion, and not base it on the notion that being obese is bad for your health in general and so likely to be a risk factor in covid death without any supporting data.
If the same percentages of obese and non-obese people in a population die from covid – then there would be no increased risk of covid death due to obesity.

There might be. The obese people who died may not have done so had they not been obese. There are too many other factors at play to make such a simple assumption.
