One thing that has always puzzled me, what is the calculation that they do to yield this number? We know it's irrational so there must be some sort of division sum they do that yields a non recurring quotient. Anyone?

Entertainment, and as someone else said, testing the relative speed of computers. There are plenty of things that go on that are of less use than this.
It not about use, it's a challenge, because it's there.
There are uses that we non-mathematicians and non-engineers don't understand. Large prime numbers are used to protect our security when we tap in our credit card numbers online.
Atheist, if I'm ever asked to key in a 31m-digit Pin code, I'm going back to the cash economy.
