QUICK and healthy recipes?

I'm looking for really quick (quick is the operative word here) but healthy recipes. I have a few standards but I'm looking for inspiration, just recently I've been really busy at work and I'm not very well at the moment so by the time I get home I find it a struggle to come up with ideas to feed the family.

grill some bacon, cook pasta, chop up some fresh tomatoes and spring onions grate some cheese few minutes in micro takes only minutes and tasty and quick
as you are working and not feeling too well could your family help out ?

Sounds yummy Crete, I'll definitely try this one.
I could ask husband but his idea of food is a Vesta curry - God knows I've tried with him but after 20 years I know when I'm beat! Son is 8 and he makes lovely homemade pizza (4oz sr flour, tablespoon of oil, 150ml water makes a wet dough, roll out and top with tomato sauce and toppings of your choice 15 mins in hot oven yum!) but can't eat pizza every night.
Hi Hellion, here�s one of my favourite & quickest recipes�

1. If you have one of those pan steamer things put some salmon in there (you may want to rub a bit of oil on to prevent sticking) with a bit of chopped ginger on top. It should only take about 10 � 12 minutes to steam, but check pack instructions

2. In a separate pan boil some pasta (whole-wheat is healthiest). Once cooked drain and stir in some pesto sauce.

3. Serve with the salmon on top of the pasta.
Make sure you have some vitamin packed smoothies, they are comfort food as well as good for you. Delegate the family's cooking to the family if they're old enough. Hope there's someone to do the washing up!
Go to Asda at the freshly prepared meals section, they do really tasty savoury pancakes, you can get them with a minced beef filling or a chicken and mushroom, I don't like mushrooms but can't defo vouch for the mince beef ones, I have them with a packet rice and mashed potatoes, a lovely wee dinner.

Obviously you have to like houmous - but some really grainy wholemeal toast topped with broccoli or spinach, a big glop of houmous and olive oil and black pepper is great for lunch.

The AInsley Harriot low fat cookbook is great - really good effort to taste ratio.
You will need diced chicken breast, bean sprouts, peppers, spring onions, courgettes, honey, teriyaki sauce, lemon/lime juice, herbs and spices of your choice (fresh coriander, chives, lemon thyme, ginger, chillies and garlic are among the ones i use.

Stir fry the chicken in a little olive oil with all the spices/herbs you choose plus the teriyaki sauce (you can use soy sauce or even worcester sauce), dribble of honey and a few squirts of lemon or lime juice.

Chop up the peppers, spring onion, courgettes and add to the wok.....stir fry and then add the beansprouts.

Continue to stir fry until everything's cooked. Taste and add more honey or even a pinch or two of sugar if needed.

Takles about 5 mins to prepare and 10 mins to cook and tastes lovely.

You could leave out the beansprouts and just have the chicken with the peppers etc stir fried and have a side dish of noodles or even eat the stir fry in a tortilla wrap....the list is endless
Quick Macaroni Cheese - made in a large non-stick saucepan, so minimal washing up.

Boil the macaroni in large non-stick saucepan together with a large sliced onion. After about 10 minutes (or however long macaroni takes), drain. Return cooked macaroni & onions to saucpan and stir in plenty of mature grated cheddar cheese until melted and macaroni is coated.

If you want some colour, throw in some frozen peas while the macaroni is cooking. Garnish with tomato wedges or chopped salad leaves.

Soak the saucepan in hot water immediately after dishing up.
