Just a bit of pretentious nonsense. I would guess it is supposed to convey a sort of informal fun impression, but as usual, overuse has destroyed whatever impact it originally had.
This usage first appeared in the USA in the early 1930s. I guess it came from the same stable as the more recent 'lite' as in 'Lite Bite Restaurant'. (Indeed, isn't there an American beer also called Miller 'Lite'?) I imagine the reason for such barbarisms is that they are supposedly 'easier' to read/write. Perhaps they should extend that approach and advertise a 'Kwiz Nite'.
It's blatently because people who run Quiz 'Nites' are really cool
most americans spell light lite and night nite, in my experience.

quiz nite looks more aesthetically correct because its the same length and publicans are commoners so can't spell :-)

Cos, you're supposed to be brainy enough to know the correct spelling or there's no point in turning up, but you're still wellcome if you can only manage the nite.
Or even welcome, football. Blatantly welcome, in fact.

I like your style Spellmaster. Do you police the incorrect use of apostrophes as well?
