A few days ago at the local butchers I bought quite a few things including 2lbs of livers. Trouble is I cannot remember which ones- lamb, pig or calves. Is there any way I can tell just by looking at them i.e. Is there an obvious difference? And will it affect what I use them in? Was planning liver and onions, and a pate.

Soaking any offal was common years ago to cleanse it, but my Mother only ever soaked the stronger liver like Ox to tenderise and reduce the strong taste.

Whether it did or not I have no idea.

My favourite liver is chicken livers, yummy.

Easy
Pigs liver is roughly the same size and weight of human livers around two to three pounds in weight. An ox liver around 6lb plus and a lamb liver around one pound whole
