You can' t beat it mammyalynne
4 oz. margarine
3 oz. sugar
1 level tablespoon Golden Syrup
6 oz. self-raising flour
pinch of bicarbonate of soda
1 teaspoon ground ginger.
Melt margarine and syrup in a pan, but do not boil. Add flour, bicarbonate of soda, ginger & sugar to melted mixture. Mix well, then roll into small balls. Place on baking tray (leave space between for spreading). Bake at gas mark 5/190°C/375°F for 15 minutes. Cool on wire rack. They will be very soft when taken out of the oven, so leave them for a few minutes before placing them on rack.
