Can anyone please tell me if the Saudi Arabian Riyal is an acceptable currency in Dubai airport for snacks /refreshments etc .

Not sure about the Saudi money, but if you take some US$ you will be okay.

If I remember rightly they take anything, but you might not be impressed with the rate they give you. Probably not for food just for goods.
