Things to do in the Caribbean

We're going on a Caribbean cruise in February and we wanted to start planning the day trips we would like to do. P&O offer trips which we will be looking at as they're usually very good but if we decided not to go on their trips, can anyone recommend anything to do on the following Islands/stops/ports:

1. Key West (USA)
2. San Juan
3. St. Thomas
4. St. Maarten
5. Antigua (good chance we're off on the P&O trip here cos it's excellent - went on it last time)
6. Dominica
7. St. Lucia
8. Mayreau - private Island (we know a quiet little beach here that no one else knows so chances are we'll be doing sunbathing & swimming unless you can come up with something really good)
9. Barbados

We enjoy swimming and snorkelling, particularly if involves with sea creatures, ie. last year we swam with stingray, turtles, dolphins and would be happy to all those again. Also enjoy sedate walking (not hiking), cycling, landscapes/views. We also love any sorts of land animals as well and vegetation, ie. rainforests, woodlands, etc. And shopping - we love shopping, so markets, malls etc. - would love to hear about.
We prefer activities rather than laying about on a nice beach (that's what Mayreau's for lol on our penultimate day).
