Can you see Snowdon from any point in the Shropshire Union Canal? Anyone know?

I don’t think so.
A spur off is the Llangollen Canal which is in the Snowdonia National Park.
The Llangollen and Montgomery canals are branches of the Shropshire Union in Wales and you can just see Snowdon on a clear day from the Llangollen branch. Worth a diversion on that branch even if you don't see Snowdon. You may also be able to from the Nantwich basin or Hurleston Junction area on a clear day given that the Cheshire landscape is still relatively undeveloped and flat.
