When I copy downloaded MP3's to a CDR, they will only play on a DVD player or PC. My car CD player will play other CDR's but not mine?

Your car stereo is probably not able to read them in MP3 format. You need to write them in WAV format.

If you use cheap CDRs this might also be the reason.

If you are just copying them as MP3s, only certain players will read them. You need to use your burning software to create an audio, rather than data CD.
