When I find a pic. I like on Google Images and save it as my PC background, it saves as multiple images. How do I get just one pic the right size and dimensions to fit my screen?

First save the image to your computer,
then go to the control panel and navigate to the image you saved (under the wallpaper tab).
You will see a little drop down menue on the side, from it select "Stretch to fit" and then click apply.
With any look that should have sorted your problem, assuming you use XP
I would right click on a blank bit of desktop, select properties, click on desktop. Under 'position' experiment with either centre or stretch for the best effect.
Almost certainly stretch
Make sure that you pick a good sized image - it will look grainy if stretched to desktop size otherwise. Most desktops are a minimum of 800x600 pixels, 1024x768 is much more common and there are much larger sizes too.
For a picture to look "right" on your desktop the picture needs to have the same number of pixels (across and down) as your monitor resolution.

To find your monitor resolution select on the desktop with the RIGHT button, then choose properties, then the settings tab.

Note the numbers in the screen resolution field (1280 x 1024 or whatever yours is)

Now go to a "wallpaper" web site and download a picture matching your screen resolution size.

For example this site offers pictures in all sorts of sizes:

In fact there are some GREAT pictures on there.
