I truly cannot stand predictive text and for some reason my Samsung GT E2120 has decided to take over and not allow me to write even a single word of text of my own choosing. Does anyone know how to get back to selecting individual letters and symbols ?

Depending upon the operating system installed on your Samsung phone, one of the following routes should allow you to access the option to disable predictive text:

Settings > General Management > Language and Input > On-screen Keyboard > Samsung Keyboard > Smart Typing

OR
Settings > General management > Language and input > On-screen keyboard > Predictive text

OR
Settings > Language and input > Samsung Keyboard > Predictive text

Thank you Chris, but I think you may be assuming a smartphone and I should have mentioned that this is just a simple phone (google image GT E2120). There is no access to a keyboard control and the user manual doesn't even mention predictive text. For no reason I can fathom the problem I had has disappeared as mysteriously as it appeared, which makes me very uneasy - I need to know how to tame the beast.
Pressing and holding the hash key # switches the T9 predictive text on and off
It looks like you'll have to experiment with the 'Menu' options by following these generic instructions from the user manual:

Unhelpfully though, they say to press 'Menu', even though there's no button labelled as such! It looks like it might mean the 'outer ring' bit to me though:

As Fitzer suggests, it might be worth seeing what the # key can do for you. It certainly works with the Nokia 3310, which is about as basic as a phone can get (and not too dissimilar to your Samsung phone):

Thanks guys, will try the # if I get stuck again.
It is very easy to turn off the predictive text on any mobile. Just to go settings and then tap on Language and input. Now tap on the Samsung Keyboard > Predictive text and turn it off.
