Is there any cord or something that can allow two tvs to be used for viewing (i.e. each player gets their own screen which the other can't see, as opposed to split-screen on one tv) of a multiplayer game from an Xbox?

You will need 2 consoles with a cross-over network cable connecting them together. (Oh, and 2 copies of the game of course).  You can then start a system link game, providing the game supports it.
its a shame that u cant run 2 displays from 1 xbox as this would make 'split screen' games far more entertaining.
