Help please!

When I had word 2000 I could always set my fonts so they appeared same every time I wrote a letter.
I now have Word 2007 and despite trying to follow the instn in 'help' it does not work. It always defaults to Times New Roman.

Each time I go to write a letter I change it to Lucinda Sans which I want to be my default font and then click on 'default' on the right hand of the screen bar. It works for all my letters until I go out of Word - then appears as Times New Roman again when I next enter Word!!
In simple terms please - how can I set the default?

Thanks
