I want to replace my mountain bike tyres (size 26x1.95) with ordinary street ones. What size should I get and do I need to replace the tyres also?

You still need 26" ones but the width (1.95") will just be narrower. A bike shop will be able to advise.
I wouldn't go too narrow (nothing below 1.5) and obviously go for a tyre with tread, even if minimal, rather than slicks for the wet/winter months...
Yo do not need tread on a bicycle tyre. Nobody has ever aquaplaned on a bicycle, or even a motorcyle, the tyre has the wrong section. Tread does not give grip, contact area does.

So why do GP motorcycle riders have treaded tyres on their motor bikes when the track is wet jomifl?

I would ever ride my motorcycle without treaded tyres, in fact it's illegal !

You have never ridden a motorcycle in the wet I presume.
