If a party that has obtained a Judgement by default and then fails to meet a deadline set by the Judge regarding the amount their claim is for, what happens or can happen next?

I assume you are talking about paying up. You go back and apply for "enforcement", add those costs on to the amount. Ultimately send in the Bailiffs and they'll add their costs.
Or do you mean that the party obtained JiD for a sum to be decided and evidence had to be filed for a disposal hearing?
