On visiting a church in Essex, I intended to write for some info on it. I was told, by a helper there, that churches don't have post codes. Is this true? And, if so, why?

They do indeed have postcodes. They may have their own postcode, or share one with other buildings. It just depends on their size and location.

Call me a complete nonsensemonger, but the rationale was that churches "don't have letter boxes". And I've never bothered to look whether or not this is true!
Well they probably don't but there's usually a vicarage ( or whatever) attached or nearby, so I expect that's where post gets delivered regardless of whether it's addressed to the church or the vicarage.
surely you don't need to write to a church...can't you just kneel down next to your bed and start "dear god.....
As far as I am aware churches do have postcodes. The church where I was minister certainly had a postcode even before it had a letterbox, and I have sent letters to a number of churches in England before advertising various conferences. They all had postcodes. If they don't have a letterbox, the postoffice usually had some arrangement with them. You should be able to find postcodes online. I can't remember the website for UK postcodes right now and I'm busy working on something right now. Try a goodle search on www.google.com
