1000 litres of distilled water at STP = 1 tonne = 1000kg

If you mean 'ton' which is 2240 lbs, then its roughly 1016 litres
1 UK ton = 984 litres
1 US ton = 1102 litres
1 tonne = 1000 litres

These are close conversion of tap water at about 10 degrees C.
Colder means heavier and warmer equals lighter water per volume.

How do you get a UK ton (2240 lb) to occupy a smaller volume than a metric tonne (~2205 lb) ?

Wildwood, turn about! You went the wrong way!

1 UK ton ~ 1016 litres
1 US ton ~ 907 litres
1 tonne = 1000 litres
