my dad informs me that you have to put lots of sugar into a floater coffee so that it works. why is this?

 imagine he said it as when the sugar dissolves in the water it keeps the same volume, whilst containing more molecules, so it's denser, amking it easier for things to float on it, this is similar to the dead sea which is extremely bouyant due to the large salt content

I Have had severl floaters without sugar. Its how you pour the cream. It has to be poured v carfully and slowly.

Steveb - Whilest you are almost right, there is always and increase in volume on disolving one materials in another, however the total volume of the solution may be less (or in some cases more) than the volume of the two componenets.

Does the sugar in solution not make the cream less likely to emulsify in the coffee and thus rest on top?
What if you dont take sugar? I have worked in a restaurant and I used to make them without sugar all the time. Its how you pour the cream.
